I think something simple is always a good introductin. Have the students grow a bean plant to observe the different stages of the plant cycle.
Ive also seen an experiemnt where each child gets a leaf and places it in a cup of colored water(something that is easily visible) to observe how water travles through the veins in a plant.
Simple things like this could really go a long way in the classroom.
