Great question! I am currently doing the same. I have taught 6-12 Family and Consumer Science Education and am now going back to school for K-5. I do not have a lot of insight yet, but one thing I have found is the younger students do a lot better when things are hands on. I am currently doing a 60 hour practicum with 4th graders. I chose this e-book because I love to cook and have a FACS degree. I am fascinated by foodborne illnesses and really enjoyed learning the science behind them. I thought the sections at the end of the chapter, Key Ideas and Evidence of Understanding, were great tools for teachers to use. I also enjoyed the various activities throughout the book, whether it be a video, slideshow, or something interactive. I thought this aspect of the e-book would be beneficial for all types of student learners and help keep them engaged. My only negative comment would be that some of the videos (one in particular about hand washing) were a little outdated, but the information was still relevant.
