Great question, this can be very tricky. I would avoid all personal comments about religion and beliefs and focus on what needs to be taught. I would remind students that they have the right to an opinion, but they can discuss it later with their peers elswhere.

I have noticed that although children do get become curious and interested in science, they tend to disengage quickly. If there any recomandations to keep students engaged once they already understand the concept being taught?

Definitly have students explore around and tell you their findings. There is science everywhere, so maybe encourage outdoor exploration and see what they find and explain to you.
