I think the great thing about these sorts of projects is that students usually ARE engaged! They want to come in and see their plant's growth and how far it has come since they planted it. I personally think it is a great idea to integrate a little bit of both zoom and videos. Have you heard of virtual field trips? You can find many, even on NSTA and it is a great way to engage students. It is usually all set up for you and they provide the video and resources you need.
