Better informative assessment

I am a student teacher who just finished their first rounds of methods and one of my biggest struggles was creating an informative assessment of my student and their knowledge. I had very few students turn in HW and since I only taught science for one week it was not worth it to nag them about the work. What are better ways to gather written evidence of your student knowledge?

I'm hoping you mean formative assessment which does not have to be written. I use things like journal entries where they may draw, label, color, or write a description of their experiment, questioning and sharing, having students explain to each other what happened and what their conclusion is based on evidence. Look up formative assessment techniques using the 'Explore All Resources' button.
