How could I create an interactive science lessons for younger students who have learning disabuilites?

I'm not sure of their age, but I would definately draw in the senses. For example, if they are exploring soil, and apple, a leaf, etc.: How does it feel? What is it made of? Does it have a color or texture?, etc. You can pick one sense to do each day. Have them give you words from their observations and write them down to reread and refer to as you discover a new sense. Their attention span may be short, but they willl give you a signal when they have had enough.
