I am in student teaching right now and I see my cooperating teacher using it in our 3rd grade classroom. In my observation kids see interactive notebooks mostly as somekind of art activity rather than a reflection journal. I would also love to know more about how to integrate these notebooks in an efficient way in a science class.

Depends how long are you subbing. If it is only a day or week project then students might get to you and behave differently whereas if you sub for a longer period like for a teacher who is off on a maternity leave then I think you do get the knee deep teaching experience which involves lot of other professional commitments like attendidng PLCs and other professional development meetings. My daughter's school is hosting a Hands on Science fun session where parents are going to be partners with students in lot of scientific activities. We just had a training session done where they talked about different things that parents can incorporate at home in a fun way to boost science awareness among kids.
