I think starting a garden is a great oppurtunity to incorporate multiple subjects into a learning unit. The students can learn about the life cycle of plants, while using math to help them measure soil, water, and food, etc. You can also create writing and reading lessons to help your students learn more about taking care of plants and what they learned overall.
