You can gather supplies from outside like twigs, leaves, feathers, etc and make animals out of them as like an art project. The kids can create an animal and even do a project about the animal they created. You could always expand on this project for older kids and have them look for animals and listen for animals throughout the summer to make a log of everything they've seen.

For young children, we decorated rocket ships using paper towel tubes and we tied a string at a diagonal from one end of the class to the others to get the rocket ships to go from Earth to the moon. I would recommend if you have an outdoor area to find old tires or pots and do some planting. Organize the plants by vegetables or types of flowers and have them labeled. Make it the students' responsibility to water the plants and pick the vegetables when they are ready. Kids really have fun with this. Also, since it is summer any water play activities will be fun.
