I think a great way of tracking the students learning is allowing the to take note of things they found interesting or any questions that come from the experience. Afterwards you can have the student create a project or explore the topic deeper. A scavenger hunt through the museum could help track what the students experience on the trip.

Any trip you take can be connected to science. If you are looking for a low budget outting have the student walk around the community. On their way they can chart the plants or trees that they see. I think a wonderful way to start off the class and get students excited for science is to plan a lesson around a phenomenon. When the students see the phenomenon they will be engaged and want to know how it happened. You could also plan an experiment or activity that gets the student creating and exploring together.
