Turtles or hamsters make great class pets! I had a hamster in my class and we had so many lesson planned around him. We would collect data on his activity (sleeping, eating, running the wheel, etc) and then we create a chart showing his active times. At the school I am currently place, the students use a science interactive notebook, and the teacher has one for herself as well. It is a composition notebook, and on every left page the students paste in information they have received from the teacher or their notes, and on the right side they write their reflections. You could incorporate your lesson into other subject areas. For example, you could have the students during reading time, read about science. Or during math, create a lesson using science based lesson material but also incorporate the math objective in the lesson (measurement, etc).
